How to select: 

The skin should still be firm, but the spines will have grown far apart and the skin will have turned from a shiny to a matte texture when ripe. They must ripen on the tree because the quality of the fruit is bad when picked too early.

How to eat: 

Thinly slice of the dark tip on each ridge. Set the fruit on its side and cut off the stem end. While still laying on its side, slice the starfruit to your desired thickness, thick or thin. Cutting in this way will reveal the fruit's unique star-like shape. The seeds are not to be eaten and should be removed before serving.
