How to select: 

The flesh is a dark green that will darken considerably as it ripens. The flesh should give slightly to the touch. An avocado that is overripe will have wrinkly, sunken skin. One that is under-ripe will be hard as a rock. They will ripen within a few days if left on a counter. Once ripe, put them in the refrigerator to prevent them from over-ripening too quickly.
