Spicy Noodles with Pomegranate Seeds

This spicy pasta dish is a special way to take advantage of the abundance of pomegranates during the fall season.


  • 1 ½ tsp cumin
  • 2 tsp red chile
  • 2 tsp paprika
  • ½ cup chopped cilantro
  • ½ cup chopped parsley
  • 3 cloves minced garlic
  • juice of 2 meyers lemons
  • seeds from one pomegranate
  • 3 spiralized zucchini
  • 3 minced celery stalks
  • ½ clove sliced shallot
  • 1 avocado


Run the zucchini through the spiralizer.  Set aside in a strainer to allow time for the noodles to "sweat".


Cut the cilantro and parsley. Put in a food processor with the lemon juice, cumin, chile, paprika and garlic. Blend until it becomes the consistency of a sauce.


Remove, put in a bowl, add the celery avocado, and shallot. Mash with a masher.


Slowly add the sauce to the zucchini, mixing until the desired noodle to sauce consistency is reached.


Top with the pomegranate seeds.
