Garden Salad with Summer Herb Dressing


Bliss out on the earthiness of fresh summer herbs with this flavor punched salad dressing.


Dressing Ingredients:

  • Leaves from 1 or 2 stalks of fresh basil
  • Leaves from 1 stalk of fresh marjoram
  • Two stalks of fresh dill
  • small handful arugula
  • large handful baby spinach
  • 4 soaked sun-dried tomatoes
  • 1 or 2 dates, chopped
  • 1 large heirloom tomato
  • juice from 1-1 ½ lemons


Add the herbs, dates, and sun-dried tomatoes together into a small food processor and run until the ingredients are finely chopped, Next, add the rest of the ingredients and run again until it is a smooth sauce.


Toss the dressing with the salad. Select ingredients that are in season and perfectly ripe. Mine was tossed with mixed greens, more arugula, avocado, heirloom cherry tomatoes, thinly sliced radishes, grated beets, minced celery, sprouts, sugar-snap peas and a large handful of blueberries. Divine.


 No oil, salt or refined sugar.   Just pure, divine goodness.
