Arugula Pesto Dressing

This zesty dressing is packed with flavor, thanks to the garden fresh herbs and arugula.

 

  • 3 large handfuls arugula
  • 4 sundried tomatoes, soaked
  • 1-2 large, ripe heirloom tomaotes
  • large handful fresh basil leaves
  • tsp. fresh margoram
  • juice of one small lime

 

Soak the sundried tomatoes in water for several hours.  Once soaked, add the sundried tomatoes with the herbs and process together in a food processor.

 

Once they are finely chopped, add the rest of the ingredients and process until smooth.

 

This dressing can be poured over raw spiralized noodles, or added to a tossed salad.
